Honey and dijon mustard are two of my favorite foods. I had this strange impuse to build a site about honey and dijon mustard products and recipes. I grew up working with honey bees. The preferred honey yield in my area, which is the Blue Ridge mountains of North Carolina, is called sourwood honey. It comes from the bloom of the sourwood tree. This honey has a mystical deep taste to it that's hard to describe. If the honey is pure sourwood honey, your nasal passages will get a jolt that you won't soon forget. This honey and locust honey are probably the best honeys available. The temperature, rainfall, and types of trees and plants in the area have a big impact on what types of honey the honey bees make. .
