STIR FRIED TURNIP GREENS RECIPE

1/2 pound chopped bacon
2 pounds fresh collard or turnip greens
1/2 cup chicken broth
1 tablespoon sugar
1/2 teaspoon salt
1 tablespoon balsamic vinegar
2 medium size apples - cut into wedges
1 tablespoon mustard (if desired)

Wash greens thoroughly, and drain.
Stack 3 or 4 leaves together and roll tightly.
Cut rolled greens into 1/4 inch strips. Repeat with
remaining greens. Set aside.

Cook chopped bacon in a preheated wok at high until crisp.
Remove bacon, and leave the drippings in the wok.
Set the bacon aside.

Add chicken broth and next 3 ingredients to the wok.
Cook until bubbly. Add greens and cook stirring constantly,
10 minutes or until tender. Stir in bacon and apples.

Serve immediately.

Makes 6 servings.
