| Ingredients | Yield: 4 servings
1 broiler-fryer (about 3 lbs.), cut up 3 tablespoons vegetable oil 3 tablespoons minced onion 2 tablespoons white vinegar 3 tablespoons light brown sugar juice of one lemon (about 2 tablespoons) 3/4 cup chili sauce 3 tablespoons Worcestershire sauce 1 teaspoon ground mustard 1 cube chicken bouillon 1/2 cup water 1/2 cup bourbon whisky 1/2 cup minced celery freshly ground pepper to taste 1/8 teaspoon chili powder 1 teaspoon well-rubbed dry tarragon

| Preparation | Discard wing tips and giblets and save for other use. Skin chicken, if desired. Brown chicken pieces in oil over moderate heat. Remove chicken; drain grease, if any. Saute onion lightly in same pan. Add remaining ingredients and mix well. Put chicken back into sauce in pan. Cover and simmer over low heat until tender, about 45 minutes. Taste; add salt if needed. Serve with saffron rice. |
